French pear pudding

Serves: 4

Preparation time: 10-15 minutes

Cooking time: 20-25 minutes


• Canola oil spray

• 2 medium pears, peeled, cored, quartered and thinly sliced

• 1 tablespoon lemon juice

• 2 tablespoons sultanas (or chopped, dried pear*)

• 1/2 cup stone-ground plain flour


• 2 tablespoons caster sugar (or a low-calorie sweetener suitable for cooking*)

• 2 eggs, lightly beaten

• 1 teaspoon vanilla essence

• 300mL low-fat milk

*Further decreases the GI value.

Pear Custard


1. Preheat oven to 180°C (350°F/Gas 4).

2. Lightly spray 4 cup non-stick muffin holes with canola oil spray.

3. Put the pear slices and lemon juice into a bowl and mix to combine.

4. Layer the pear slices and sultanas into the muffin holes.

5. Whisk together the flour, sugar, eggs, vanilla & milk.

6. Pour over the pears and bake for 20-25 minutes or until set.
